Cider, or hard cider, is an alcoholic beverage made from fruit juice that’s fermented in tanks, adjusted for taste or variety, and packaged much like beer (bottle, can, or keg). Though traditionally made from apple juice, pear, peach, and other fruit juices are being used as the beverage is experiencing a craft revival. Ciders usually share shelf space with beer in stores.

Gin
Gin is an unaged spirit distinguished by its flavor, which is derived predominantly from juniper berries. Gin can either be produced by distilling with botanicals or by flavoring a neutral spirit to give it the predominating characteristics of juniper berries, a process commonly known as compounding.

Gin is growing rapidly in popularity with craft distillers, restaurant bar programs, and mixologists, and is on the cusp of a booming renaissance.

Liqueurs
Liqueurs, or cordials, are versatile alcoholic beverages comprised of a distilled spirit base, sweetener, and flavoring components. Base spirits are usually a neutral spirit, brandy, whiskey, or rum. Flavor profiles include herbal, spice, fruity, nutty, and floral. Generally quite sweet, with some resembling syrup, liquers are staples behind the bar and in the kitchen.
Did You Know? Napoleon once tried to seize the recipe for Chartreuse, a French liqueur, claiming it for the “Secret Recipes Commission.”

Moonshine
Traditionally known as a high-proof spirit distilled and sold illegally, the term “moonshine” is nowadays used for the general category of unaged white spirits. With its growing popularity, the moonshine category is wide open for innovation. Unlike vodka, moonshine can be distilled at lower proofs to retain the flavor characteristics of the mash ingredients. These natural characteristics serve as the foundation on which our Lab Team builds the flavor profile for the outstanding moonshine products we create.
Did You Know? “XXX” on a moonshine jug indicated that the product had been run through the still three times and that the shine was pure alcohol.

RTD Cocktails
RTD Cocktails
RTD stands for “ready to drink”. An RTD cocktail is a premixed alcoholic beverage, popularly a malt-based beverage, sold in single-serve containers, ready to drink. RTS stands for “ready to serve” and generally denotes a premixed cocktail beverage that can be poured in several servings. RTD cocktails are popular for entertaining because they are quick to serve and a fraction of the cost of traditional cocktails. Many beverage companies are finding success in the RTD and RTS categories as the demand for variety grows.
Did You Know? Low-calorie, pre-made cocktail offerings boosted the RTD/RTS category sales, which still continue to rise.

Rum
Rum is spirit distilled from a fermented sugarcane byproduct such as molasses, sugarcane juice, or sugarcane syrup. It's usually aged in used whiskey or bourbon barrels, though some rum is unaged.
Did You Know? The British Royal Navy was issuing daily rum rations to all enlisted men up until 1970.
Like whiskey, rum has natural flavor characteristics that can be enhanced through blending and flavoring techniques.

Vodka is an unaged, neutral spirit that is distilled and processed to be without distinctive character, aroma, taste, or color. Neutral spirits are distilled at or above 190 proof. Because the object is to remove any distinct characteristics from the spirit, vodka can be made from just about any fermentable material, though generally a grain mash is used in the United States.

Whiskey
Whiskey
Whiskey is a spirit distilled from fermented grains and aged in a wooden container, most popularly a charred oak barrel. Though just about any grain can be used, a traditional whiskey recipe will include corn, rye, wheat, or malted barley. It is distilled at a lower proof than vodka in order to keep the flavor characteristics of the grains used. Whiskey derives its color and much of its flavor profile from the wooden container in which it’s aged.
Did You Know? Scotch can only be produced in Scotland, while bourbon can only be produced in America.
Craft distillers have been experimenting with grain recipes and aging methods to create new flavors.
